A beloved, comforting beef stew, popular in many parts of Latin America. It’s warming & mellow with the flavours of cumin, onion, and tomato. The longer cook time is well worth it to break down the tougher cut of beef into melt-in-your-mouth perfection. Delicious served with rice or warm tortillas. 


Ingredients
12 cup
water or broth
4
green bell peppers
1 tbsp
oil
2 lbs (900 g)
cubed stewing beef

Preparation

STOVETOP:

  1. In a bowl, whisk together seasoning and water. Chop peppers.
  2. In Sauté Pan, heat oil over medium-high heat. Add beef and peppers; cook until beef has browned on all sides.  Add reserved seasoning mixture and stir to combine.
  3. Bring to a boil. Reduce heat to low and simmer, covered, for 1 hour or until beef is tender.
  4. Serve over rice, with tortillas, or mashed potatoes with chopped parsley, if desired.

PROGRAMMABLE PRESSURE COOKER:

  1. In a bowl, whisk together seasoning and water. Chop peppers.
  2. Program pressure cooker to “SAUTÉ.” Heat oil; add all the beef at once and cook until lightly browned. Add peppers and reserved seasoning mixture; stir to combine.
  3. If the pot looks a little dry at this point, add 14 cup water.
  4. Secure lid. Place steam release valve in the “SEALING” position. Program to “HIGH” pressure and set the timer to 35 min. It will take some time for the pressure cooker to get to the proper temperature before the timer will start to count down.
  5. When cooking time has finished, let the pressure release naturally for 15 min.
  6. Using a long-handled spoon, push the steam release handle to the “VENTING” position. Release pressure completely before opening lid.
  7. Serve over rice, with tortillas, or mashed potatoes with parsley, if desired.
